Sugar Free Mini Pancakes

These tiny pancakes are sugar-free and make an excellent breakfast paired with greek yogurt or your favorite fruit.


  • 2 cups rice flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 3/4 cup vanilla greek yogurt
  • 1 cup unsweetened coconut milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 T Sweeteners USA Organic Monk Fruit Sweetener
  • 1/3 cup mini chocolate chips
  1. Combine cinnamon, Monk Fruit Sweetener, flour and salt in bowl and mix well.
  2. Combine wet ingredients in another bowl, yogurt, egg, milk, vanilla
  3. Mix dry and wet ingredients together and add in chocolate chips
  4. Spray pan or put small amount of oil for pancakes, we love coconut oil
  5. Add batter by spoonful to pan that already is at medium heat with oil
  6. Cook until bubbles about 2 minutes on one side and 1-2 minutes on the other.
